Whenever I need to whip up something tasty that can serve a good number of folks either at home or to bring to a potluck, I love this gnocchi recipe. It’s healthy, vegan, and tasty but most of all filling and a great way to satisfy herbivores and omnivores alike! You’ll be surprised how quick it is to prepare and how fast it will disappear ; )
- 1 package of vegan gnocchi (some have cheese & egg so be sure it’s just potatoes & flour – my fave brand is Gia Russa) – unless you want to make your own, recipe coming soon!
- 1 cup chopped organic spinach
- 1 1/2 cups of vegan “meat” marinara
- 1 cup of mozzarella Daiya Cheese ( you can sub with nutritional yeast to act as a Parmesan topping if you’re looking for a healthier option)
Chop your spinach and prepare your sauce. Once the sauce is done, take it off the heat and toss in your spinach. Cook your gnocchi (takes about 4 minutes), drain and add it to the sauce mixture. Preheat your oven to 350 degrees. Toss together and add to a glass or ceramic casserole dish. Top with cheese and bake for about 5-8 minutes, or until cheese is melted (or nutritional yeast is golden brown)
Serve with a nice mixed green salad & voila, quick and delicious dinner!
