I absolutely love Pecan Pie but these bars are even better ad you can have them for breakfast, as a snack and yes, of course, as a treat ; ) Raw, vegan and guilt free, be sure to try my raw and vegan pecan pie squares recipe this holiday season!
Crust
- 1 cup oats
- 1/2 cup pecans, finely chopped
- 1 heaped tablespoons coconut oil
- 2 tablespoons maple syrup
Pecan Layer:
- 1 1/2 cups pitted dates
- 1/2 cup pecans, minced
- 2 tablespoons smooth nut butter of choice
- 1/2 teaspoons ground cinnamon
- Pinch ground ginger
- Pinch sea salt
- 1/4 cup water
- 2 tablespoons coconut oil
- Non-dairy milk as needed
Chocolate Topping:
- 1/2 cup dark chocolate
- 1 teaspoon coconut oil
- Handful pecan nuts, minced
- Pinch sea salt and cinnamon
- Heaped teaspoon maple syrup
For crust: Combine crust ingredients in bowl until mixture resembles coarse crumbs and can be molded. Press crust mixture evenly onto bottom of ungreased 13×9-inch baking pan. Place in the fridge for an hour.
For filling: Combine all ingredients except for pecans in a blender and blend until smooth. Mix in pecans and then spread evenly over cooled crust. PLace back in fridge for an hour or more for it to set. After they have set, cut into bars and top with chocolate sauce and sprinkle with pecans.
For topping: In a double boiler melt the chocolate and coconut oil until chocolate sauce is made. Add in maple syrup, salt and cinnamon and mix well. Drizzle sauce on top of pecan bars and sprinkle pecans on top. Allow to cool in fridge to set.

Yep! That’s one of the things I love most about this recipe: it’s PERFECT for cooking ahead of time. I usually cook them the night before I’m going to serve them and leave them in the pan (uncut) in the fridge. I cut them up and put them on a dish when I’m ready to serve them!
These didn’t last long in my house! My girls devoured them.
