When I was in Istanbul, I had the wonderful opportunity to do a Turkish cooking class at Second Home Hostel. We cooked up a feast but one of the recipes I wanted to share was the super tasty and insanely simple lentil soup we made. You’re gonna love the flavor as well as the simplicity of this vegan turkish lentil soup recipe!
- 2 cups lentils
- 6 cups of Water or vegetable broth
- 1 medium yellow or white onion, grated
- 1 potato, grated
- 1 tablespoon Red pepper paste (or tomato paste – depends if u want more sweet or spicy)
- Salt and pepper, to taste
Add everything to a pot and simmer for 45 minutes over medium heat. Everything will incorporate and cook down to a chunky puree consistency.
