This time of year I’m obsessed with light yet flavor packed salads. And this Strawberry Arugula Salad hits all the spots! Healthy, light, tasty and simple. You’re gonna love it!
- Arugula
- Cooked quinoa
- Cucumber, peeled and chopped
- strawberries, sliced
- Vegan Feta (i use violife)
- Balsamic vinegar
- Olive oil
- Salt and pepper, to taste
Add arugula, quinoa, cucumber and strawberries to a serving bowl. Drizzle balsamic, olive oil, season with salt and pepper and top with crumbled vegan feta cheese. Mix up and enjoy!!
