I love the convenience but most of all I love that I can whip up a healthy meal in minutes that I can spend more time enjoying than making! I can make it in 10 minutes and it can sit and fluff for up to 30 minutes while I work on the veggies and other meal time elements. It’s absolutely foolproof and also keeps clean up time to a minimum. No more scraping burnt rice out of my pots, haha! It’s a versatile must have in my pantry every week!
As a bonus, here’s one of my fave recipes that features Minute® Rice!

- 2 cups Minute® Whole Grain Brown Rice, uncooked
- 4 cups baby spinach, finely chopped
- 1 can artichoke hearts, drained and finely chopped
- 4 tablespoons vegan pesto
- ½ cup vegan Parmesan cheese, plus more for topping
- Salt & pepper, to taste
- Cook rice according to the instructions on the box. Use vegetable stock in place of water for more flavorful rice.
- Once rice is done cooking, turn heat to medium then add spinach, artichokes, pesto, salt, and vegan Parmesan cheese. Stir to combine and heat until spinach has wilted and everything is well incorporated.
- Serve, top with extra Parmesan cheese and enjoy. *Feel free to add in chopped olives, chopped cherry tomatoes or any other yummy mix-in’s you like!
