Who doesn’t love pasta? Especially big casserole pasta dishes as they are so great for dinners, potlucks and all sorts of gatherings. Be it a weekday dinner to a holiday party, ,y easy vegan meaty baked ziti is sure to please!
- 1 package vegan Italian sausage, diced into bite sized pieces
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 3 cloves garlic, finely minced
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- 1 bag spinach, washed, dried and coarsely chopped
- 2 (24 ounce) jars vegan meat marinara sauce
- 1 (16 ounce) package ziti pasta (gluten free if desired), cooked
- 1 ½ cups shredded vegan mozzarella
- 1 bottle vegan liquid mozzarella by Miyoko’s
- 1 cup grated vegan parmesan cheese
In a medium saute pan over medium heat, saute the onion and garlic until fragrant and translucent. Add in the sausage and cook thoroughly. Add in the spinach and cook until wilted. Remove from heat.
Preheat oven to 375 degrees.
In a large mixing bowl, mix the pasta and the sauteed sausage and spinach mix. Add in the vegan meaty marinara and mix until all ingredients are well incorporated.
In a large casserole dish, add in half of the mixture and spread evenly. Top with shredded mozzarella cheese, layering evenly and entirely. Top with the rest of the ziti mixture and spread evenly. Top with the liquid mozzarella and then with the vegan parmesan.
Bake for 35 minutes or until all cheese is fully melted and when done, allow to cool for 10 to 15 minutes before serving. Top with chopped parsley and enjoy!
