
Crust
- 1/2 cup plus 2 tablespoons vegan butter
- 1/3 cups sugar
- 1 teaspoon vanilla sugar
- 3/4 cup wheat flour
- 2/3 cup oat bran
- 1.5 teaspoon baking powder
- 1/4 cup plain vegan yogurt of choice
Preheat oven to 350 degrees. Line a baking pan with wax paper.
Mix dry ingredients in one bowl and the wet ingredients in another. Fold the wet ingredients into the dry, mixing well.
Fill prepared baking pan with crust mix, making sure it’s evenly distributed.
Bake for 10 minutes and then remove to fill.
Filling
- 1 1/2 cups vegan vanilla yogurt of choice
- 1/3 cup sugar
- 1 teaspoon vanilla sugar
- 3/4 cup fresh lingonberries
Mix all the ingredients, minus the berries, until well incorporated.
Fill par baked crust with filling and top generously with lingonberries.
Place back in the oven until crust is golden brown, about 15-20 minutes.
Serve warm and enjoy!!

Awesome! Although it is difficult to find a recipe with fresh Scandinavian berries (not jam), this sounds close to the originals. Most of people on this side of the Pond have no idea what lingonberries are.
However, being of Nordic and Celtic origins, I just don’t do well all that processed artificial vegan stuff. Food tastes and suits whole a lot better with real, natural dairy products that Norse Land is famous for.
Real milk, real fish, real meat, real berries- for good health and for good fit (well I do mean actual physical fit, LOL).
So, with nature in mind, I substituted vegan yoghurt with non-fat plain (no sugar!!!) Siggis Islandic Skyr, available in Safeway and Sprouts, and replaced vegan butter with real Kerrygold butter. Just a bit less of it….
Lingonberry Pie looks a charming dish to prepare. The photos and the tips are giving me real cooking goals to venture in my kitchen and try the recipe.
