You can call these Caribbean grits. A simple and nutritious way to start the day, it’s a good way to spice up (and veg up) traditional hot cereal! Breakfast, lunch or even dinner, whip it up and enjoy!
- 1 to 2 cloves garlic, minced
- 1 medium tomato, diced
- 1/2 white onion, finely chopped
- 1 tablespoon olive oil
- 3 cups water
- 1 cup corn meal
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper, to taste
- Sliced avocado, for serving
Saute garlic, tomato and onion in oil over medium heat. Add water and bring to a boil in a medium pot then add in the remaining ingredients, stirring repeatedly to avoid lumps. Serve with sliced avocado and enjoy!
Yields about 4 to 6 servings
