I am loving all the fun things that we can have delivered to our homes these days! One of my absolute favorites are meal delivery services that encourage people to cook without the hassle of meal planning or shopping. It’s such a fun way to get people to eat healthier at home while still addressing the busy schedule problem.
I have fallen in love with Handpick Smart Groceries as they offer a variety of cuisines and really have a leg up on the competition. Handpick Smart Groceries are similar to meal kits like Blue Apron and HelloFresh, except:
1) groceries are shipped directly from a grocery store instead of a warehouse
2) meals start at $6/meal instead of $10/meal
3) there’s no requirement to commit to a subscription
I was delighted that they had a fantastic veggie option and the 3 meals I was able to create were delicious! And hubby approved I might add!
For today, I’m sharing the Lemon Pilaf because it was scrumptious, simple and fun. I loved that the ingredients were fresh, perfectly portioned to last all 3 meals and even though the recipes say you get 2 servings, they are hefty ones and could really be more like 4 servings! Great to last for left overs of feed a family of 4 and stretch out over the whole week. And so affordable too!
I’m sharing their Lemon Garbanzo Pilaf recipe because it’s so yummalicious!
- 1 large Maui onion, diced
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 cup Basmati Rice
- 1/2 can garbanzo beans
- 2 cups vegetable broth
- 1 large lemon
- 1/2 cup parsley
- 3 tablespoons olive oil
- Salt and pepper, to taste
Bring 2 cups vegetable broth to a boil then turn the heat down low.
Add 1 diced onion and 2 Tbsp olive oil to a separate saucepan. Cook until onion softens, then add 3 cloves of minced garlic. Cook until golden brown.
Add 1 cup basmati rice, ½ can garbanzo beans, and 1 tsp cumin to the saucepan and toast on medium heat, constantly stirring for about 2 mins. Next, add 2 cups of vegetable broth. Bring everything to a boil, then turn the heat down to medium low and cook for about 20-25 minutes.
After the rice has cooked, zest 1 whole lemon and then juice the same lemon. Add both lemon zest and juice to the rice mixture, and season to taste with olive oil, salt, and pepper. The acidity from the lemon may alter how much salt and pepper you add to the rice.
To serve, divide rice into two bowls and garnish with ½ cup of chopped parsley.
