And here is a fun way to incorporate one of the soups, the yummy Portobello Mushroom Soup, into a tasty dish!
Creamy Portobello Mushroom Casserole
- 2 tablespoons vegan butter or olive oil
- 3/4 cup diced onions
- 1/2 cup sliced fresh mushrooms
- 2 cups sliced green beans
- 3 cups vegetable broth
- 1 1/2 cup of Imagine® Creamy Portobello Mushroom Soup
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1/2 cup to 3/4 cup French-fried onion rings, plus some for topping
- 1 cup grated vegan cheddar cheese
Preheat the oven to 350 degrees F.

Boil green beans in broth for 10 minutes and drain. Add the green beans, mushroom soup, onion rings, garlic powder and salt and pepper, to taste, to the onion mixture. Stir well.
Pour into a greased 1 1/2-quart baking dish. Bake for 20 minutes, then top the casserole with the cheese and additional fried onions and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.
