Who doesn’t love a pancake for breakfast? Well, we all do but we know they shouldn’t be a daily breakfast, right? Well, with my vegan gluten free lentil pancakes recipe, you CAN have pancakes every day! Full of protein and fiber, these “Fit Jacks” will become your new healthy breakfast go to!
- 1/2 cup raw red lentils
- 1 cup plant milk of choice (I use unsweetened to keep them extra healthy)
- 1 tablespoon monk fruit sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon baking powder
In a small bowl, mix lentils and milk and refrigerate for 3 hours or better yet, overnight.
Once ready to prepare, add in the rest of the ingredients and blend thoroughly.
In a pan heated ot medium with coconut or avocado oil, pour batter in to make desired size pancakes. Once the cakes have lots of bubbles popping up, flip them over and cook the other side until done.
Top with monk fruit maple syrup to keep them low carb and low sugar or top with anything you desire. Enjoy!
