Sometimes you just need a sweet treat. Something crispy, sweet and with a touch of chocolate. Bananas are great for a healthy treat but why not jazz them up a little bit in this asian inspired twist on a Bananas Foster!
- 1 quart coconut oil, for frying
- 2 large ripe bananas
- 8 vegan spring roll wrappers (7 inch squares)
- 1/4 cup brown sugar
- 1/4 cup vegan chocolate chips
- Vegan vanilla ice cream or whipped cream, for serving
- Vegan chocolate syrup or sauce, for drizzling (optional)
- Preheat the oil in a deep-fryer or large cast-iron skillet to 375 degrees F (190 degrees C).
- Peel bananas and slice into fourths. Place one piece of banana diagonally across the corner of a spring roll wrapper along with a few chocolate chips and then sprinkle with brown sugar to taste. Roll from the corner to the center, then fold top and bottom corners in, and continue rolling, kind of like a burrito, making sure the contents are tightly wrapped. Dip your finger in water and brush the last edge to seal shut. Repeat with remaining banana pieces.
- Fry a few banana rolls at a time in the hot oil until evenly browned. Remove and place on a paper towel lined plate to drain.
- Serve with a scoop of ice cream and/or whipped cream and drizzle with chocolate syrup
