The holiday baking season is here! Get into the spooky spirit with my ghoulishly good yet sinless Chocolate Salted Caramel Stuffed Jack ‘O Lantern Cookies recipe! And why are they sinless? They are not only vegan but they are also gluten free and sugar free! Enjoy these decadent treats, guilt free!
Cookies
2 cups all purpose flour (I used Bob’s red mill 1 to 1 gluten free baking flour)
1 cup dairy free butter
1 cup powdered sugar (I used Lakanto monk fruit powdered sugar)
1/3 cup pumpkin purée
1 tsp pumpkin spice mix
2 tsp vanilla extract
1/8 tsp sea salt
Cinnamon Sugar – I mixed cinnamon with Lakanto sugar granules together to make mine
Filling – I used Lilly’s Stevia Sweetened Dark Chocolate Salted Caramel chocolate bars
In a stand mixer, cream the butter, powdered sugar pumpkin purée and vanilla together until fully incorporated. Add in flour, pumpkin spice, salt and mix into a dough. Cover dough with plastic wrap and chill in the fridge for 15 minutes.
Roll dough out onto a piece of parchment paper and cut out the dough using a cookie cutter. Remember if you are making sandwiches, do half with the faces and half without but these are great with or without faces ; ) Sprinkle cinnamon sugar on all of the cookies evenly. Refrigerate cut out cookies for 30 mins before baking. Preheat oven to 350 F.
Bake cookies for 15 minutes until golden brown at the edges. Remove from oven and place on cooling rack.
Allow to cool for about a minute but remain warm enough for the chocolate to melt. Flip the cookies that will be the bottoms over carefully with a spatula and place 4 squares of the chocolate bar on top then place a top cookie over it and allow sandwiched cookies to cool completely (this way you aren’t dripping with melted chocolate!)
