For those who know me, Gin and Tonic is my go-to drink. Great year round, I’ve “summerized” it even more by making it a chilly treat! I hope you enjoy my vegan gin and tonic popsicle recipe this summer and beyond!
Lime slices, thinly sliced
Cucumber slices, thinly sliced
Per Popsicle mold
- 1 ounce gin of choice (I also use Hendricks)
- 2 ounces tonic water ( I always use Fever Tree Elderflower Tonic)
- ½ ounce fresh lime juice
Place one or 2 lime and cucumber slices in each ice popsicle mold.
For each popsicle, mix together gin, tonic and lime juice. Pour into ice pop mold and place in the freezer overnight, or until completely frozen.
