It’s the middle of summer and there is still lots of swimsuit time left! That means we still have to look after our figure but want to indulge in some yummy foods. How about “healthifying” tuna salad by not only using protein packed chickpeas instead of tuna but subbing the fattening mayo with delicious, creamy avocado! You’re sure to love my vegan avocado chickpea tuna recipe!
- 1 cup chickpeas, drained and crudely mashed
- 1½ ripe avocado
- ½ cup diced celery
- 1 heaping tablespoon fresh dill
- 1 green onion, sliced
- ½ teaspoons garlic salt
- ½ lime, juiced
- Salt and pepper, to taste
In a medium bowl, add in mashed chickpeas. Add avocado and mash together with a fork, breaking up any large chunks.
Add celery, red onion, dill, green onion and garlic salt. Stir together and add lime juice, mixing to combine. Season with salt and fresh black pepper, to taste.
Chill 20-30 minutes and serve as salad or with crackers, chips, crudite or on a sandwich!
