Peanut Butter Power Protein Bites

raw vegan protein bitesSometimes you just want a sweet treat but you know you’ll regret it if you indulge. Well, not if you indulge in these protein packed peanut butter, cocoa and goji treats! I loved experimenting with peanut butter and goji berries as part of Peanut Butter & Co’s fun mystery ingredient challenge and I think you’ll love the pairing too ; )  These protein bites will curb your sweet tooth with none of the guilt!

  • 1 teaspoon vanilla
  • 1 teaspoon organic cocoa powder
  • 1/4 cup agave
  • 1/2 cup Peanut Butter & Co Peanut Butter
  • 2 tablespoon coconut oil
  • 1/2 cup raw almonds
  • 1/2 cup cashews
  • 1/2 cup macadamia nuts
  • 5 mejdool dates
  • 1/4 cup dried raw goji berries
  • 1/4 cup dark chocolate chips

Combine the first five ingredients in a medium bowl and heat at low to medium temperature in a double boiler for about a minute, just to warm up and make sure the ingredients are well incorporated. Stir until everything is well combined.

Put the almonds, cashews, macadamia nuts, and dates in your food processor and pulse until the mixture resembles coarse sand. Be careful not to overprocess, you don’t want it to turn to nut butter.

Dump mixture out into a large bowl, add the peanut butter mixture from the small bowl, and stir well.

Stir in the chocolate chips and goji berries.

Scoop out a heaping tablespoon at a time and form into ping pong sizes balls.

Store in the freezer until ready to eat.
