This year, help Santa stay in shape with my Vegan Protein Chocolate Chip Cookies Recipe! Packed with protein and sugar free, enjoy them all year long, guilt free!
- 1 cup Nut Butter of choice
- 2/3 cup Golden Monk Fruit sugar substitute (I used Lakanto Golden Monk Fruit Granules)
- 1 Vegan Egg Replacer of choice
- 1/2 cup Vegan Vanilla Protein Powder of choice
- 1/2 cup Vegan Chocolate Chips (I use Lily’s Stevia Sweetened Chocolate Chips)
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.
Mix all of the ingredients in a medium bowl until you get the consistency of cookie dough. Mixing by hand is best.
Roll dough into 12 balls and place on the baking sheet, pressing down on each to flatten a bit into cookie shape.
Bake for 12-14 minutes, remove and allow to cool completely on cooling rack.
These can be stored in an airtight container in the fridge and are even better and crispier!
