Who doesn’t love a quick and tasty pasta meal? When you’re looking for a new pasta sauce that is easy, flavorful and also healthy, you’re going to love my vegan Garlic and Sage Sweet Potato Pasta Sauce recipe!
- 2 large sweet potatoes, peeled or 1 bag of frozen sweet potatoes
- 1 cup of unsweetened plain non-dairy milk ( keep some extra on hand if you want a thinner sauce)
- Heaping handful of fresh sage leaves, cleaned and coarsely diced
- 2-3 garlic cloves
- 1 tablespoon vegan butter
- 1 tablespoon maple syrup
- 1/2 cup vegan parmesan shredded cheese
- Salt and pepper, to taste
Over medium heat in a saucepan, saute garlic and sage until fragrant. Remove from heat
Prepare you sweet potato by either boiling, baking or if you’re short on time, microwaving. Either way, make sure it’s soft and mashable.
Add sweet potato and milk to the warm pot with the sage, garlic and butter mixture and blend with a hand blender until smooth. If it’s too thick, add in more milk one tablespoon at a time until you’ve gotten the desired consistency. Add in the maple syrup and cheese and blend in until well incorporated. Season with salt and pepper and pour over your favorite pasta.
