This time of year, the smell of cinnamon and baked goods permeate everything and make us feel all tingly, cozy and warm. This cake will give you all the Fall and holiday feels so be sure to try my vegan cinnamon apple cake recipe soon!
- 2 vegan egg replacers of choice
- 1 3/4 cups sugar
- 2 heaping teaspoons cinnamon
- 1/2 cup sunflower oil
- 6 medium Gala or Fuji or Honeycrisp apples
- 2 cups flour of choice (gluten free if desired)
- 2 teaspoons baking soda
Preheat oven to 350°.
In a large bowl, mix the egg replacers, sugar, cinnamon and oil.
Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.)
Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.
Pour mixture into a greased one 9×13 or two 9″ round pans. Bake for approximately 55 minutes, until top is golden brown.

It looks very appetizing! I would also recommend that before you cool the cookie dough, roll it out between two layers of parchment paper. Then remove the top layer and put the dough in the refrigerator. It will be easy to cut shapes from such a blank, and you will not have to fight with the cold dough stuck together. I got a lot of good advice when I attended cookie baking class. This can help you achieve better results
