Not everyone is so keen on the parsley heavy dish but lots of people love the fresh and crunchy parts of it. So how about replacing the parsley with quinoa for a protein packed and hearty side dish! Enjoy my quinoa tabbouleh recipe!
- 2 cups cooked quinoa
- 3 tomatoes, finely chopped
- 1 small cucumber, finely chopped
- 4 green onions,
- ½ cup of fresh mint, finely minced
- 2 lemon juice
- 3 tablespoons olive oil
- salt and pepper, to taste
Mix the quinoa and vegetables in a large bowl, until well incorporated.
Add lemon juice and olive oil, then season with salt and pepper and mint.
Refrigerate for at least 30 minutes before serving.
