So in honor of the incredible local produce available at my local California Walmart, I chose to create a fun seasonal recipe with a twist! My local Walmart was featuring delicious local Gala Apples so I created super fun vegan apple ginger pie-kies!
Cookies:
- 1/2 cup vegan butter, softened
- 1 cup light brown sugar
- 1 vegan egg substitute
- 1 teaspoon vanilla extract
- 1/2 cup apples, peeled and chopped very fine or grated
- 1/4 cup vegan ginger chews, finely chopped
- 1 1/4 cup gluten free all-purpose flour
- 1/2 teaspoon sea salt
- 2 teaspoons baking powder
Place on the parchment covered baking sheet about 2″ apart then flatten.
Place in oven and bake for 12-15 minutes.
