I think I might make some quesadillas with my mushrooms, and add goat cheese, spinach, and some homemade roasted tomatillo sauce. Either that or I might use them in a thai-ish coconut milk soup with some tangy lime and cilantro.

what wouldn’t I make with my own home-grown mushrooms?!
one of my favorites would have to be veggie burritos: sliced mushroom, green pepper, onion, lentils and cheddar cheese all wrapped in a corn tortilla and baked in the oven until the cheese melts and the edges turn golden brown. delicious!!!

OMG, what a cool idea! I love topping my veggie burgers with sauteed mushrooms, so I’d use mine for that.
I’d probably use these in some spaghetti. Yummy!
for our vegan holiday gathering, i’d use them in several dishes, including these:
– a green bean casserole: homemade onion rings from organic white onions drenched in unsweetened soy milk and seasoned flour, cooled on wire racks. then i’d blanche organic green beans till they’re bright and crispy, sautee the mushrooms till they’re soft and fragrant and set them both aside while i make a white roux with garlic, earth balance, flour and unsweetened organic soymilk. add the mushrooms to the roux. the dish: green beans with the sauce poured over, topped with onions.
– vegan spankopita: saute the sliced mushrooms with diced onions & bell pepper and spinach. in a food processor, blend tofu, follow-your-heart vegan cheddar. blend the “cheese” and shroom mixture together, wrap in whole wheat vegan phyllo dough in squares. brush with garlic oil, sprinkle with fennel, sesame and poppy seeds.
