
That is why Discover Ruidoso and Healthy Voyager’s Eat Like an Athlete™ Restaurant Program are once again helping athletes and visitors find delicious, performance-minded meals throughout the village—this time for the XTERRA World Championship, taking place October 8–11, 2026.
From October 5–12, 2026, participating Ruidoso restaurants will feature specially selected Eat Like an Athlete menu items designed to help guests prepare, perform, recover and celebrate during championship week. It is local flavor with a purpose: making it easier to dine well while experiencing everything this mountain destination has to offer.
A New Chapter for XTERRA and Ruidoso
The 2026 XTERRA World Championship marks the event’s 30th anniversary and its return to the United States. Ruidoso’s alpine setting provides a fitting stage: open water, rugged trails, steep climbs, technical descents and the unmistakable character of the American Southwest.
My long-standing partnership with Discover Ruidoso has allowed me to work closely with the community’s talented chefs and restaurant owners to show that healthy dining can be flavorful, welcoming and deeply connected to a destination. After bringing Eat Like an Athlete to IRONMAN 70.3 race week, I am thrilled to continue the program for XTERRA athletes, families and fans arriving from around the world.
For the program, I work one-on-one with participating restaurants to identify menu items that provide a thoughtful balance of carbohydrates, quality protein, healthy fats and nutrient-rich ingredients. The goal is not to prescribe one perfect plate. It is to give diners a range of satisfying options that can support training, pre-race preparation and post-race recovery.
Healthy eating should also be inclusive. Plant-based and vegan-friendly selections are part of the program, helping more visitors find meals that work for their preferences and needs without missing out on a memorable Ruidoso dining experience.
Fueling Beyond the Finish Line
Race nutrition does not begin when the starting horn sounds, and it does not end at the finish line. Athletes build their foundation over several days through consistent meals, hydration, sleep and familiar foods their bodies already know.

Why Nutrition Matters for XTERRA
XTERRA is not a traditional road triathlon. The full-distance World Championship on October 10 challenges elite and age-group qualifiers with a 1.5-kilometer swim, a 27-kilometer mountain-bike course and a 10-kilometer trail run. The surrounding weekend also includes championship racing for youth and junior athletes.
Off-road racing asks athletes to do more than maintain a steady pace. Technical terrain, climbing, descending and rapid changes in effort require endurance, focus, coordination and resilience. Ruidoso adds another important factor: elevation. The championship course unfolds at more than 6,900 feet, where smart preparation becomes especially valuable.

How to Build an XTERRA Friendly Restaurant Meal
A practical race-week plate usually starts with familiar carbohydrate, adds a satisfying source of protein and includes vegetables or fruit. Before racing, athletes may prefer cooked vegetables and simpler foods that are lower in fiber and heavy sauces. After racing, the priority shifts toward replacing energy, supporting muscle repair and enjoying a well-earned meal.
Before the Race
• Choose rice, potatoes, pasta, bread, tortillas, oats or fruit as the carbohydrate anchor.
• Add a familiar protein such as beans, tofu, eggs, fish, poultry or lean meat.
• Request dressings and rich sauces on the side when helpful.
• Skip unfamiliar ingredients and anything that has caused digestive trouble in training.
After the Race
• Pair carbohydrates and protein in the same meal.
• Include fluids and some sodium, especially after a warm or dry day.
• Choose food that is both nourishing and appealing; recovery meals should still be enjoyable.
• Continue eating and hydrating over the rest of the day rather than treating one meal as the entire recovery plan.

More Than a Race
The XTERRA World Championship is a multiday celebration of adventure, community and 30 years of off-road racing. Athletes from around the world will gather beneath the Sierra Blanca range to swim, ride and run for world titles, while families, fans and residents share in the energy throughout the village.
Between the welcome festivities, championship races, local shopping, mountain scenery and Ruidoso hospitality, there is plenty to experience beyond the course.
