I’ve always been a huge fan of Dr. Neal Barnard and all the wonderful things he does with PCRM (Physicians Committee for Responsible Medicine).
So of course you can imagine that I was over the moon when I received his cookbook. Teamed up with nutritionist Robyn Webb, these 2 knock it out of the park!
What is great about this cookbook is that it isn’t just recipes. It explains the benefits of a plant based diet as well as covering how the recipes in the book
will assist you in reaching optimal health. From cholesterol lowering recipes to fighting off cancer and diabetes, Barnard & Webb
covers which foods can help specific ailments, etc. In addition, the healing properties of the ingredients, fruits
and vegetables found in the book are showcased in detail.
This cookbook is a lifestyle planner that happens to include recipes in order to achieve that healthy lifestyle.
The dishes and meals prove that getting well isn’t a punishment. The food found within the pages
of this cookbook are delicious as well as nutritious. Not to mention, you don’t
have to be a gourmet chef or stock up on one-time-use ingredients to
cook up your healthy feast.
While there aren’t to many photos of the recipes, just looking at the ingredients and the variety of
dishes is enough to get your salivary glands going ; ) On top of it, each recipe has a listing of per serving calories, fat, sodium, etc as well as
the vitamin content. Awesome!
Here are some of my fave recipes:
- Spiced Pumpkin Oatmeal
- Lemony Lentil Vegetable Stew
- Hummus Pizza
- Quinoa Timbales
- Baked Apples in Phyllo DoughAnother neat little ditty in the book is the recipe menus. Dr. Barnard and Robyn Webb have put together a few entertaining menus
to make cooking for a large group, a no brainer. Love it!
It’s like healthy vegan by numbers, you can’t go wrong with
the Get Healthy, Go Vegan Cookbook!
