Sometimes you want dessert but you A) know you shouldn’t have something naughty B) don’t feel like baking anything. Well, with my yummy vegan chocolate espresso chia pudding, you can tick both of those things off and still have a delicious treat!
- 1 cup soy, almond or coconut milk
- ¼ cup chia seeds
- 3 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 2-4 tablespoons brewed espresso, depending on strength (can use cold pressed coffee)
- 1-2 tablespoon maple syrup
