Ok, so now, what did I create with my simmer sauce? This week, I cooked up the yummy Latin Veracruz sauce to create a fun, quinoa filled pepper!

Here’s how!:

Latin Veracruz Quinoa Stuffed Pepper

  • 4 large bell peppers (any color)
  • 1 package Organic Imagine Latin Veracruz Simmer Sauce
  • 1 package vegan ground beef
  • 2 tablespoons chopped garlic
  • 1 clove garlic
  • 1 cup cooked quinoa

Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. In 4-quart Dutch oven, add enough water to cover peppers. Heat to boiling; add peppers. Cook about 2 minutes; drain.

filling in panIn 10-inch skillet, cook onion and vegan ground beef over medium heat until onions are translucent. Stir in quinoa salt, garlic and 1 cup of the veracruz sauce; cook until hot.

Stuff peppers with quinoa mixture. Stand peppers upright in ungreased 8-inch square glass baking dish. Pour remaining tomato sauce over peppers. Cover tightly with foil. Bake 10 minutes. Uncover and bake about 15 minutes longer or until peppers are tender.

    Taste like like Cambells Soup did a take on Thai. Washed out flavor, no power to the coconut milk/creme. Should have known better “Thai Coconut Curry” is way too generic of a label.
