- Pizza crust of choice (I used gluten free)
- 1/2 cup Taco sauce
- 1/2 to full package Vegan ground beef (I used Beyond Meat)
- 1 cup chopped onion
- 1 packet Taco seasoning
- 1 can corn, drained
- 1 can black beans, drained
- 1/2 to 1 cup vegan shredded cheddar cheese
- cilantro, minced
- Avocado slices, for garnish
Preheat your oven to the specifications on your pizza crust.
Over medium heat in a medium pan, sauté the onions in a tablespoon of high heat oil of choice until translucent. Add in the ground beef cook thoroughly. Add in taco mix and be sure it is evenly incorporated. Remove from heat and set aside.
Prepare your pizza crust by brushing with olive oil. Then add the taco sauce and spread evenly over the crust, making sure to not go all the way to the edges.
Add a thin layer of cheese.
Top with the vegan ground beef mixture, spread evenly. Then add corn and beans evenly, top with a nice layer of cheese and then sprinkle cilantro evenly.
Bake the pizza based on the specifications of your crust or until cheese is melted and crust is golden brown.
Allow to cool a few minutes before slicing then add the avocado slices, vegan sour cream and/or salsa on top as a yummy garnish. Enjoy!
